Serving: 6 - 8 servings
Prep time: 20 mins
Cook time: 75 mins
What you will need for this chilli recipe:
500g pack ciabatta bread mix
3 tbsp garlic butter
1 large aubergine, cut into thin rounds
200g pack chestnut mushrooms, sliced
small bunch basil leaves, torn
140g ready made tomato pasta sauce
2 250g balls vegetarian mozzarella, sliced
How to:
- Make dough following pack instructions, reserving a few tablespoons of mix for dusting.
- Heat 2tsp of garlic butter in a large frying pan, then cook aubergine rounds for 2 minutes each side or until. Set aside.
- Fry the mushrooms for 4 minutes or until soft, set aside.
- Lightly butter an 18cm round cake tin, about 4cm deep. Dust work surface with reserved mix and roll out two thirds of the dough large enough to come out the sides of the tin. Line tin with dough, press into corners, leave sides hanging over edge.
- Layer up all the ingredients, starting with the aubergine, basil, pasta sauce, mozzarella and mushrooms. Repeat with remaining ingredients, pushing down well.
- Roll out the remaining dough to form a lid and put on top. Pinch together lid and sides twisting them together to form a crusty edge.
- Preheat oven to 200C and cook pie for 30 minutes. Remove from tin and place on a baking sheet, brush with garlic butter. Cook for another 20 minutes more, brushing with garlic butter again before serving.
- Enjoy with friends and family!
